Recipe | Vegan Chilli

Vegan Chilli


 Medium Onion

 Cloves Garlic 

1 x 400g can 

 Kidney Beans

1 x 400g can 

 Chopped Tomatoes

1 can 


1 large 


1 large 

 Red Pepper

1 tablespoon 

 Cajun Spice Mix

2 tablespoons 

 Olive Oil

1 pinch 

 Salt & Pepper


  • Finely chop the onion
  • Chop the carrot into small cubes
  • Slice the pepper into thin slices
  • Finely slice the garlic
  • Add the olive oil to a deep frying pan and add the onions. Cook on a medium heat until they are translucent (about 4 minutes)
  • Add the garlic and carrot to the onions and cook for another 5 minutes
  • Add the sliced pepper
  • Add the Cajun Spice and make sure everything is coated in the mixture
  • Add the beans and tomatoes, stir everything together and leave to simmer for about 25-30 minutes
  • Add the sweetcorn and cook for another 5-10 minutes.
  • Serve with rice, or jacket potato, or whatever you want!
