Recipe | Chicken Skewers


 Chicken Breasts
 Red Pepper
 Large Red Onion 
4 tablespoons   Greek Yogurt
4 cloves   Garlic (minced)
2 tablespoons   Olive Oil
2 tablespoons   Lemon Juice
2 tablespoons   Tomato Paste
1 tablespoon   Paprika
1 teaspoon   Dried Oregano
1/2 teaspoons 

 Cumin

1 pinch 

 Salt

1 pinch 

 Freshly Ground Black Pepper


Method

  • Preheat oven to 200°C.
  • Combine the yogurt, garlic, olive oil, tomato paste, lemon juice, paprike, oregano, cumin, salt and pepper in a bowl to make the marinade.
  • Cut the chicken into bite-sized pieces and coat with the marinade.
  • Refrigerate for 10 minutes (or longer, if possible!).
  • Using skewers, thread the chicken and alternate pepper and onion. You should be able to make between 4-6 kebabs.
  • Bake for 20-25 minutes until chicken is cooked through.
  • Serve with Garlic Turmeric Rice.
