Recipe | Banana Bread

Banana Bread


250g   All-purpose Flour
 Ripe Bananas
1 teaspoon   Baking Soda 
1/4 teaspoon   Salt
1/2 teaspoon   Ground Cinnamon
115g   Butter
150g   Brown Sugar
2 large   Eggs
80g   Plain Yogurt
1 teaspoon   Vanilla Extract
100g   Chopped Nuts (optional)


  • Heat oven to 180°C
  • Butter loaf/cake tin
  • Whisk the flour, baking soda, salt and cinnamon together
  • In a separate bowl, using an electric whisk/mixer, beat together the butter and brown sugar (approx. 2 minutes)
  • Add the eggs (one at a time) to the butter and sugar, mixing until creamy
  • Add the yogurt, mashed bananas and the vanilla extract to the wet mixture
  • Slowly add the dry ingredients into the wet mixture using a slow speed on the mixer
  • Add the nuts if using
  • Spoon the mixture into your tin
  • Bake for 60-65 minutes. Cover with foil halfway through to prevent burning the top and sides. Use a toothpick - if it comes out clean, the bread is done!
  • Leave to cool, slice it up and enjoy!
