Ingredients

2  Red Onions (finely sliced)
 1

 Courgette (finely sliced)

 Clove of Garlic (crushed)

30g

 Tomato Puree

400g

 Can of Butter Beans

100ml

 Double Cream

2tbsp

 Grated Parmesan


Method

  • Fry the onion and courgette in some olive oil until they are really soft - about 10 minutes.
  • Add the garlic and tomato puree and cook fur another 2 minutes, coating everything in the tomato.
  • Pour in the beans including the liquid and add the cream and parmesan.
  • Simmer for 10-15 minutes.
  • Serve with fresh bread.
