Let's get ready to cook Jambalaya!

Ingredients

 Onion

 Red Pepper (sliced)
   2
 Cloves of Garlic (crushed)
1tbsp  Cajun Seasoning
250g  Long Grain Rice
400g  Can of Plum Tomatoes
400g  Can of Kidney Beans
350ml  Chicken/Vegetable Stock
1  Chilli 

Method

  • Heat a splash of olive oil in a large frying pan and brown the chicken or pork if using.
  • Remove the meat and set it aside.
  • Add the onion and cook for 3-4 minutes until it's soft.
  • Add the red pepper, garlic, chilli, Cajun seasoning and the kidney beans - cook for 5 minutes.
  • Add the meat back in, along with the can of tomatoes, the rice and the stock.
  • Stir, cover and let simmer for around 25-30 minutes until the rice is cooked.
