Recipe | Chicken Skewers

Ingredients

2  Chicken Breasts
1  Red Pepper
1  Large Red Onion 
4tbsp
 Greek Yogurt
4 cloves  Garlic (minced)
2tbsp
 Olive Oil
2tbsp
 Lemon Juice
2tbsp
 Tomato Paste
1tbsp
 Paprika
1tsp
 Dried Oregano
1/2tsp

 Cumin

1 pinch

 Salt

1 pinch

 Freshly Ground Black Pepper


Method

  • Preheat oven to 200°C.
  • Combine the yogurt, garlic, olive oil, tomato paste, lemon juice, paprika, oregano, cumin, salt and pepper in a bowl to make the marinade.
  • Cut the chicken into bite-sized pieces and coat with the marinade.
  • Refrigerate for 10 minutes (or longer, if possible!).
  • Using skewers, thread the chicken and alternate pepper and onion. You should be able to make between 4-6 kebabs.
  • Bake for 20-25 minutes until chicken is cooked through.
  • Serve with Garlic Turmeric Rice.
